6 strips turkey bacon cut into small pieces
3 cups cooked hominy
1 teaspoon salt
1/4 teaspoon freshly milled pepper
1 tablespoon minced parsley
6 good sized peppers (red, green, yellow or orange)
2 tablespoons grated cheese
Cook bacon until crispy and brown. The microwave works well for this. Break into small pieces in a frying pan.
Add cooked hominy, salt, pepper and parsley, and saute for approximately 10 minutes.
While the corn mixture is sauteeing, cut the tops from the peppers and remove the seeds and white membranes. Parboil the peppers in salted water for about 5 minutes.
Stuff peppers with the hominy mixture, sprinkle with the grated cheese.
Bake at 375 degrees for 25 - 30 minutes.
Variation: If dairy is a problem, try using a soya or rice based cheese.
