This healthy, fast and easy to make vegetable purree is a great side dish or appetizer bake for a family dinner or dinner party. Use your food processor to introduce healthy vegetables to your kid's meals. This vegetarian recipe serves 4.
INGREDIENTS:
3 cups button mushrooms, washed
1 cup garden peas
2 oz. butter
½ tsp. parsley, finely chopped
1 tsp. salt
1 tsp. black pepper
parsley sprigs to garnish
METHOD:
Melt butter in a pan. Add mushrooms and peas. Cook for 5 minutes. Add parsley, salt and black pepper. Fry for 3 minutes until aromas become strong.
Using a food processor, puree mushroom and pea mixture. Reheat in pan and serve hot, garnished with parsley sprigs, as an accompaniment to roasted or barbecued poultry.
